There are two species of jasmine most used in the world of perfumery which are:

Jasmine harvest
The jasmine flower is harvested at dawn to prevent the sun from burning its long white petals.
Sambac jasmine blooms from May to June while grandiflorum jasmine is harvested around August until November.
In Grasse, the production of jasmine flowers remains rare today, but it is still possible for some perfume brands to integrate this emblematic flower when creating a juice.
Prices are often high, because the harvest is done manually, due to its fragility. A long time ago, enfleurage was the technique to extract the smell of jasmine. Too expensive today, it has been replaced by the technique of extraction by volatile solvents. It consists of isolating a very fragrant waxy material, called the concrete, then mixing it with alcohol according to different processes.
Jasmine absolute, which is actually an essential oil, is then obtained once the alcohol has evaporated.
Note that jasmine costs about 4000 € per kg of absolute. Once harvested, it is carefully stored in a cold room, closed by an armored door.
Considered a unique olfactory diamond, jasmine is a priceless treasure in the eyes of the greatest noses of perfumery, who can then cut it according to their inspiration during the manufacture of a perfume.
